Happy November, friends! Yes, it has been awhile since I have shared a post with you. This 5th Grade teacher has had a busy, busy fall! I am so thankful for this time off to spend time relaxing with family & friends.

So, to kick off this Thanksgiving Week, I wanted to share some holiday fun decor/hosting ideas with you.

This past Sunday, we hosted dinner for the family. Any excuse to use my pumpkin bowls before fall is over, is a good enough excuse for me. I wanted to share my table decor with you (maybe a little inspiration for your Thanksgiving Day table setting). I loved layering place settings. It creates such a full, welcoming table.

Bowls are from Target (old). Dishes are Pottery Barn ‘Emma’. Chargers are from Home Goods.

We served Stuffed Potato Soup. Mmm, this soup is so filling and delicious! At the bottom of this post you can find the recipe. Enjoy!

Most of all, though, this is the time of the year to be thankful and grateful. I am so grateful for my health, my career, my blog readers (that’s you!) and especially my family & friends and the sweet moments we continue to create together. I hope you find some time this week to reflect on all you have and are thankful for, too. Bring on the holiday season!

Stuffed Potato Soup

2lbs. (1pkg.) shredded frozen hash browns, thawed

½ c. butter

½ c. green onions, chopped

1 can cream of chicken soup

3-4 c. Half & Half (to thin down later)

1 c. shredded cheddar cheese

Salt

Pepper

½ c. real bacon bits, plus extra for garnish

Velveeta – about 2-2 ½ inches of a regular-sized block

______________________________________________________________

SAUTE – onion in butter

ADD – soup, Half & Half and potatoes

STIR IN – cheese and bacon

HEAT GENTLY. Garnish with shredded cheddar and bacon bits.
