Taco Tuesday: Healthy Enchiladas

Hi friends! Hope your week is off to a great start and I hope you had an even better weekend! Greg & I had a low key weekend and it was oh, so wonderful. We tried a new restaurant on Saturday night and I had the most delightful, white Sangria… mmm!

And since we’re on the topic of delicious food, I wanted to share with you one of our favorite, go-to, Weight Watchers friendly recipes. Today I’ll be sharing the recipe for Healthy Baked Turkey Enchiladas. The recipe is linked, but I want to give you a little inside taste of how we make this recipe at home.

You will need:

1.5 lbs lean, ground turkey

1/2 small onion

1 small zucchini (or cucumber — we use whichever we have around)

1 cup tomato sauce

2 cloves garlic

1 can of enchilada sauce

flour tortillas (we usually make about 8)

8 oz. low fat Mexican cheese

Cooking Spray

First, preheat your oven to 375. Brown lean, ground turkey. Drain any extra fat (if needed).

Next, chop onion, zucchini (or cucumber) and garlic. Add to ground turkey.

Add in tomato sauce (we use one small can).

And stir in half a can of enchilada sauce, too.

Before building the enchiladas, use a draining spoon to drain out some of the excess sauce.

Then, assemble. After assembled, use the rest (1/2 a can) of enchilada sauce on top of your enchiladas and sprinkle on low fat Mexican cheese. *We usually spray the tops of the enchiladas with a little cooking spray just to give them a little extra crunch when baking.

Bake for 20 minutes at 375 — ENJOY!
